It's been something of a strange week weather wise - which has led me to this strange unseasonal, but I'd claim still wholly successful concoction. On saturday it was sunny, so with BBQ's in mind, I bought some pork belly strips - thinking maybe a little marinade, sling it on the BBQ and everything would be rosy.
However, the start of the week brought nothing but rain and it had even turned cold too. Never being keen on throwing away in date meat, I thought I'd have a go for a pork stew. This is possibly the apogee of Veg Box Boy cooking..... all my classics tricks were in there:
- 2 onions fine sliced and slow fried
- 4 cloves garlic, also sliced
- 1 big Leek shredded
- then the Pork cut in to bite sized pieces (this was quite fiddly, as there was lots of gristle to work around), I browned the Pork unlike the Beef in my previous stews. Simply because I though pasty-Pork doesn't look nice even after it's been cooked a long time.
And then, well basically the entire contents of my Veg Box: were chucked into my biggest pan, and covered with (chicken) stock
- 6 biggish potatoes
- 1 butternut squash
- 1 small cauliflower
- 1 celeriac (yes, even celeriac was ok in this)
- 1 bag mushrooms
- 1 bag beans
For some flavour, I nipped to my herb patch, and went for some lemon thyme and sage. All this was then simmered for an age. Served with a healthy glug of worcester sauce. For a while the 'simmer' became something of a fierce boil - which led to the cauliflower collapsing completely, and making it all look quite lumpy.
Tasted good though. Although by the time I got to eating it for lunch today the sun was cracking the flags and a nice bit of salad would have been much more appropriate.
