Post 138: Asparagus Chorizo Spaghetti

This one is becoming a regular. I'm struggling to think of anything to say about it. 

I forgot to say what I'd got in the bag this week. There wasn't much of the bag's contents in this. But Mrs VegBox had made a special request; so who am I to deny a lady?


It was just the onions that came from the box. I can feel some really awful cabbage and turnip soup coming on, if I don't get some inspiration. On the upside, all the rest of the veggies were from the market , and I'd even taken my rucksack. So pretty green.


So, to serve two:
- 3 medium to small red onions, fried slow until nice and soft in olive oil
Then added to these
- 4 cloves garlic. I'm not trying to pull, so why not?
- 5 bird's eye chillies.   What can I say, I like it hot - and this many was a lip-tingley
- 2 small courgettes cut into 1" half-moons
- 1 chorizo sausage, cut in just the same way
- 1 bunch of asparagus
- 1 punnet of cherry tomatoes halved. These only go in when the pasta (in this case 275gs spaghetti) is nearly done. Otherwise they just go to mush.
- cover with a healthy (or indeed unhealthy) load of grated parmesan.


Very easy, very nice. Not terribly very box usey-uppy
