Post 129: Christmas Pudding Panettones

I got sent some Christmas Puddings form Matthew Walkers in order that they can be used to make a new recipe. I had to be talked out of just adding a tin of bird's custard - what could be finer?


For quite a while I've been keen to have a go at panettone, so here's my christmas-ised recipe:


  • 100g christmas pudding
  • 50g mixed peel 
  • 1/2 tsp yeast
  • 15gs unsalted butter
  • 2 tbsp sugar
  • 1/4 tsb salt
  • 1/4 tsb ground cardamon
  • 1 lemon's zest
  • 130 ml milk
  • A nip of rum
  • 1 egg yolk

I got 6 individual panettone's from this recipe. They tasted lovely. I would admit though they weren't as light and fluffy as normal panettones - but then christmas pudding is more robust than most other puddings, so seemed pretty fair to me!

  2. I don't know what you mean abouy easy: there were many cooking techniques used, weighing and grating and pressing buttons on the breadmaker.

    If I try something like this again, I'll try to find a way to make it a bit fluffier (not sure how) and add more fruit and lemon.
