Post 92: Banana Cake

Ok, it's not vegetables, but baking. And I made honey icing too!

The entire effect was exactly as I wanted. In Pret, I think a teeny-tiny slice is £1.30. I made an entire log for about £2. Brilliant.

Recipe:
- 400 grams bananas (works best with banana's that are ripe, bordering off)
- 150g butter
- 300g flour
- 100ml veg oil
- 2 eggs
- 2teaspoons baking powder
- 1 1/2 bicarb

And mix and cook for about 45 - 50 mins @180. For the icing:
- 125g's icing sugar
- 3 tablespoons honey
- 1 tablespoon of milk
- 30gs butter

Blend with the electric whizzer and smear over the top. Super!

  1. This looks delicious! Have you a recipe for Carrot Cake that you could share? Preferably without walnuts. I'm sure Mrs VBB would approve.

  2. I'll try to make a carrot cake at he weekend. Especially now that I've got the hang a bit better of making icing.

Now I just need to find a packet of them little icing carrots that all good carrot cakes have.
