236: Banana Cake

Tra-la-la, Tra-la-la, One banana, two banana, three banana, more. No, three bananas is quite sufficient. And  that's quite enough of the banana splits too thank you very much.

I needed a favour at work. So, I threw in some bribery in the promise of banana cake. I duly received my favour and Rob duly received a couple of slices of banana cake. And I think everyone was pretty happy with the outcome.

Ingredients:
  • 3 bananas, preferably ripe/over ripe (because it's easier to mash them)
  • 225gs softened butter
  • 225gs brown sugar
  • 120gs sultanas
  • 3tsp baking powder
  • 2 tsp bicarbonate of soda
  • 150ml vegetable oil
  • 3 eggs lightly beaten
Method:
Well, basically it's just to mix it all up together. Doing it the right order makes life slightly simpler - but this is pretty forgiving.
  • Cream butter and sugar together in a bowl
  • Mash the bananas, and stir them and the sultanas in
  • Sift in flour, bicarb and baking powder. Mix
  • Add the eggs. Mix
  • Add the oil. Mix
  • Preheat oven to 180c
  • Butter a loaf tin.
  • Cook for ~45 minutes, or until a skewer comes out clean.
I've made this before without the Sultanas and while I like a Sultana, I don't think they add a deal to proceedings here. Next time out, I'll probably skip them.

I cooked this in one a fancy new silicone loaf tin. Which resulted in the sides of the cake bowing out in the middle. It still rose pretty well though. The edges of the cake go nice and crispy - I think this must be the oil that does that. The middle is nice and moist.

Unfortunately I've lost the photos, so you'll just have to trust it was a good 'un.
